Walnut Qatayef: A Home-Style Recipe
Sweets · Makes 12 pastries · Published October 22, 2026
Cinnamon walnuts turn one-sided pancakes into a crisp-edged dessert. Baking is a convenient home alternative to frying.

Ingredients
- 1 cup flour
- 1/4 cup fine semolina
- 1 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp instant yeast
- 1 1/4 cups warm water
- 150 g chopped walnuts
- 2 tbsp sugar for filling
- 1/2 tsp cinnamon
- 3 tbsp melted butter
- 1/2 cup sugar syrup
Method
- Whisk pancake dry ingredients with warm water; rest 20 minutes. Mix walnuts, filling sugar and cinnamon.
- Cook small rounds in a medium-hot nonstick pan on one side only. Remove when the top is dry and bubbly; keep under a towel.
- Fill each pancake with a teaspoon of walnuts, fold and pinch the edges completely. Arrange on a buttered tray and brush both sides with butter.
- Bake at 375°F for 15–20 minutes, turning once, until golden. Spoon syrup over them just before serving.
A better result
Do not overfill. A clean rim without nuts trapped in it seals much more reliably.
Serve it together
Walnut qatayef pairs with milky puddings or coffee. Ask for a ready-made pastry assortment when hosting a larger gathering.
