Tehineh Tahini Sauce: A Home-Style Recipe
Dips & salads · Makes About 3/4 cup · Published October 22, 2026
Tahini initially tightens when lemon is added, then loosens with water. Whisk patiently rather than adding oil to correct the texture.

Ingredients
- 1/2 cup well-stirred tahini
- 3 tbsp lemon juice
- 1 small grated garlic clove
- 1/4 tsp salt
- 1/4–1/2 cup cold water
- 1 tbsp chopped parsley, optional
Method
- Whisk tahini with lemon, garlic and salt. The mixture may become very thick; this is normal.
- Add cold water a tablespoon at a time, whisking after each addition, until smooth and pourable.
- Taste and adjust lemon or salt. Add parsley if desired, or leave plain for drizzling.
- Refrigerate covered until serving. Stir before use and loosen with a splash of water if it thickens. Use within 3–4 days.
A better result
A sauce for dipping should be thicker than one for dressing a salad. Stop adding water at the texture your meal needs.
