Ingredients
- 1 1/2 cups basmati rice, rinsed
- 2 tbsp olive oil
- 2 1/4 cups water, or package ratio
- 3/4 tsp salt
- 1/2 tsp allspice
- 1/4 cup pine nuts
- 1 tbsp oil for nuts
- 2 tbsp chopped parsley
Method
- Soak rinsed basmati 20 minutes and drain. Heat 2 tablespoons oil and stir in rice for 1 minute.
- Add water, salt and allspice. Bring to a boil, cover and simmer on low 12–15 minutes, or until tender.
- Rest covered off heat 10 minutes. Meanwhile toast pine nuts in 1 tablespoon oil over medium-low heat, stirring until golden; remove immediately.
- Fluff rice and scatter nuts and parsley on top. Chill leftovers promptly in shallow containers and use within 3–4 days.
A better result
Pine nuts keep browning in a hot pan after the flame is off. Transfer them to a plate as soon as they reach golden.
