Sweet Cheese Qatayef: A Home-Style Recipe

Qatayef pancakes cook on one side, leaving a soft surface that seals around the filling. This baked version uses a lightly sweet ricotta filling.

Ingredients
- 1 cup flour
- 1/4 cup fine semolina
- 1 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp instant yeast
- 1 1/4 cups warm water
- 200 g drained ricotta
- 1 tbsp sugar for filling
- 1/2 tsp orange blossom water
- 2 tbsp melted butter
- 1/2 cup prepared sugar syrup
Method
- Whisk flour, semolina, sugar, baking powder, yeast and water. Rest 20 minutes. Combine drained ricotta, filling sugar and blossom water.
- Heat a nonstick pan over medium heat. Pour 3-inch circles and cook only on one side until bubbles open and the surface is dry. Transfer to a towel and cover lightly.
- Place a spoonful of filling on the uncooked side, fold in half and pinch the edges while still flexible. Heat oven to 375°F.
- Brush with butter and bake 15–20 minutes until lightly golden. Drizzle with syrup and serve warm. Refrigerate leftovers promptly.
A better result
Fill the pancakes the same day while they remain soft. If the edges are dry, they will not seal securely.
Serve it together
