Parsley Tabouleh: A Home-Style Recipe
Dips & salads · Makes 6 side servings · Published October 22, 2026
Tabouleh is a parsley-led salad, with a small amount of fine bulgur rather than a large grain base. Dry herbs carefully so the dressing stays bright.

Ingredients
- 1/4 cup fine bulgur
- 3 packed cups finely chopped flat-leaf parsley
- 1/2 cup chopped mint
- 3 diced tomatoes
- 3 thinly sliced scallions
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1/2 tsp salt
Method
- Soak bulgur in hot water 10–15 minutes, then drain and squeeze out excess water. Cool.
- Wash parsley and mint, dry thoroughly and chop with a sharp knife rather than processing into a paste.
- Mix herbs, bulgur, tomatoes and scallions. Whisk lemon, oil and salt separately.
- Dress shortly before serving and taste for balance. Refrigerate promptly; for best texture, serve the same day.
A better result
Chopping wet herbs creates a soggy salad. A salad spinner and a dry towel make a noticeable difference.
Serve it together
Serve with kibbeh or flatbread. Order tabouleh as the fresh counterpoint to a prepared mazza platter.
