Ingredients

  • 2 cups medium semolina
  • 1/2 cup sugar
  • 1 cup plain yogurt
  • 1/2 cup melted butter
  • 1 tsp baking powder
  • 1 tbsp tahini for pan
  • 16 almonds
  • 1 cup syrup sugar
  • 3/4 cup water
  • 1 tbsp lemon juice
  • 1 tsp orange blossom water

Method

  1. Simmer syrup sugar, water and lemon juice 8 minutes. Remove from heat, add blossom water and cool.
  2. Heat oven to 350°F. Coat a 9-inch square pan with tahini. Mix semolina, sugar and baking powder; stir in yogurt and butter. Rest batter 20 minutes in the pan.
  3. Score diamonds and top each with an almond. Bake 30–40 minutes until well colored across the top.
  4. Pour cooled syrup over hot cake in two additions. Let it absorb and cool fully before cutting along the score marks.

A better result

Measure blossom water with a spoon: different brands vary in strength, and too much can taste perfumed.
