Kafta Kebabs: A Home-Style Recipe
Meals & sides · Makes 8 small kebabs · Published October 22, 2026
Ground beef, parsley and onion make a fragrant kafta mixture. Squeezing the onion keeps the kebabs firm enough to shape.

Ingredients
- 1 1/2 lb ground beef
- 1 small grated onion, squeezed dry
- 1/2 cup finely chopped parsley
- 1 tsp allspice
- 1/2 tsp cumin
- 1/4 tsp cinnamon
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp oil
Method
- Combine beef, onion, parsley and seasonings with clean hands just until evenly mixed. Chill 30 minutes.
- Divide into eight portions and shape into even logs or around metal skewers. Keep them cold until cooking.
- Heat an oiled grill pan over medium-high heat. Cook 10–14 minutes, turning to brown all sides, until the center of each reaches 160°F.
- Rest briefly and serve with tahini and vegetables. Refrigerate leftovers within 2 hours and reheat to 165°F.

Do not judge ground meat by a pink or brown center. A food thermometer gives the reliable safety check.
