Ingredients
- 2 pita breads
- 2 tbsp olive oil for pita
- 1 romaine heart, chopped
- 2 tomatoes
- 1 cucumber
- 4 radishes
- 2 scallions
- 1/4 cup mint leaves
- 3 tbsp lemon juice
- 3 tbsp olive oil for dressing
- 1 tsp sumac
- 1 tsp pomegranate molasses
- Salt to taste
Method
- Heat oven to 375°F. Tear pita into pieces, toss with 2 tablespoons oil and bake 8–12 minutes until crisp. Cool.
- Chop washed vegetables into bite-size pieces and combine with mint in a large bowl.
- Whisk lemon, dressing oil, sumac and molasses. Taste and add salt.
- Toss salad with dressing, then fold in pita immediately before serving. Keep leftovers chilled, with spare pita stored separately.
A better result
Sumac provides tartness, not heat. Taste the dressing before increasing lemon because molasses and sumac also contribute acidity.
