Soaking chopped dates softens them and spreads their sweetness through this loaf. Walnuts add a distinct crunch to the moist crumb.

Ingredients
- 180 g pitted chopped dates
- 3/4 cup boiling water
- 1/2 tsp baking soda
- 75 g soft butter
- 1/2 cup brown sugar
- 2 eggs
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 cup chopped walnuts
Method
- Pour boiling water over dates and baking soda. Rest 15 minutes. Heat oven to 350°F and line a 9-by-5-inch loaf pan.
- Cream butter and sugar, then beat in eggs one at a time. Fold in flour, baking powder and cinnamon.
- Fold in the date mixture, including its liquid, and walnuts. Transfer to the pan and level the surface.
- Bake 50–60 minutes until a skewer comes out without wet batter. Cool 15 minutes in the pan, then on a rack.
A better result
Tent loosely with foil if the top browns before the center is cooked. A dark top is not proof that a loaf is done.
