Creamy Hummus: A Home-Style Recipe
Dips & salads · Makes 6 side servings · Published October 22, 2026
Soft chickpeas and well-stirred tahini are the foundations of smooth hummus. Ice water loosens the mixture without dulling the lemon flavor.

Ingredients
- 2 cans chickpeas, 15 oz each, drained and rinsed
- 1/3 cup tahini
- 3 tbsp lemon juice
- 1 small garlic clove
- 1/2 tsp salt
- 1/4 tsp cumin
- 3–6 tbsp ice water
- 1 tbsp olive oil
Method
- For softer chickpeas, simmer them in fresh water 15–20 minutes, then drain and cool.
- Blend tahini, lemon, garlic and salt for 1 minute until creamy. Scrape down the bowl.
- Add chickpeas and cumin, then blend several minutes. Add ice water a tablespoon at a time until smooth and spreadable.
- Taste for lemon and salt, spoon into a shallow bowl and finish with olive oil. Refrigerate promptly; use within 3–4 days.
A better result
Tahini separates in the jar, so stir it thoroughly before measuring. Add water slowly to avoid making the dip runny.
