Ingredients
- 2 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/3 cup neutral oil
- 3/4 cup warm water, as needed
- 200 g feta
- 100 g ricotta
- 1 tbsp parsley
- 1 egg for glaze
- 1 tbsp sesame seeds
Method
- Mix flour, baking powder and salt. Rub in oil, add water gradually and knead just until smooth. Rest covered 30 minutes.
- Combine crumbled feta, ricotta and parsley. Heat oven to 375°F and line a tray.
- Divide dough into 20 pieces. Roll into circles, add a teaspoon of cheese, fold in half and crimp edges with a fork.
- Brush with egg, sprinkle sesame and bake 20–25 minutes until golden. Let cool slightly before serving and refrigerate leftovers promptly.
A better result
Keep filling away from the rim. Cheese on the seam prevents a reliable seal and can leak during baking.
